  • 2 cups chopped fruit
  • 2 cups sugar
  • 2 cups vinegar

  1. Place fruit, spices and sugar in jars and mix together. Leave for two days, stirring once a day.
  2. After two days, strain the mixture into a measuring cup and remove fruit.
  3. Combine the syrup with vinegar slowly, tasting as you go.
  4. Pour shrub into warm, dry sterilised jars and refrigerate.

  1. Make a simple syrup (equal parts sugar and water) in a medium saucepan over low heat, stirring until the sugar is completely dissolved
  2. Add your sliced fruit and bring the syrup-fruit mixture to a low simmer.
  3. Let it bubble away until the syrup has become the colour of the fruit
  4. Stir in the vinegar and bring the mixture to a simmer.
  5. Strain out and put the fruit aside.
  6. Pour shrub into warm, dry sterilised jars and refrigerate.
